PERUVIAN CUISINE TOUR
The cuisine of Peru is considered one of the most diverse in
the world!
We hold several Guinness World Records for variety, quantity and
quality!
Our cuisine carries over 5,000 years of history - Pre-Inca,
Inca, Colonial and Republican. We have three centuries of
Spanish culinary influence (also influenced by Arabic cuisines),
the gastronomic customs brought by the cultures from the African/Atlantic
coast and strong influence of the culinary customs of the French
who fled the French Revolution. Equally crucial are the
influences of the Chinese-Cantonese (called Chifa in Peru),
Japanese (Nikkei food) as well as Italian and other European
influences (due to immigration between the XIX and XX centuries).
Peruvian culinary arts are constantly evolving and this, coupled
with the variety of traditional dishes, makes it impossible to
establish a complete list of representative dishes. It is
noteworthy that along the Peruvian coast, there are over 2500
different kinds of soups, and there are also more than 250
traditional desserts.
The fusion of foods and flavors from four continents combine
with the history, bounty and variety of fresh ingredients that
Peru offers to create a cuisine that truly delights the senses!
Secrets of Peruvian Cuisine
Peruvian cuisine is a reflection of the country's identity.
It is a blend of cultures and influences (Indigenous, Spanish,
African, Italian, Chinese and Japanese) inherited through
centuries of coexistence. And it adds an enormous variety of
products and ingredients, the result of biological diversity and
multiple climates within Peru.
This enormous diversity (Peru has nearly two thirds of the
ecosystems of the world) is what compliments our extensive
Peruvian recipes, with our characteristic abundance of tubers,
herbs, fruits, vegetables, meats and fish. We have over 4,000
varieties of potatoes (some say as many as 8,000), 36 types of
corn, 1,500 sweet potatoes, and 623 varieties of fruits which
account for the extraordinary bio-diversity of raw materials.
The coasts, the mountains, the jungle and the forests are
sources of wealth for Peruvian cuisine, using local produce&customs
that all influence and add their personal touches to our
traditional dishes. Peru invites you to sample the best

3. Media day: Visit the village of Oropesa where we can observe
the production of their famous homemade breads.

5. Afternoon/Evening: Demonstration and sampling the following
